S'mores Cakesicles

Using a cakesicle mold, we've transformed the beloved combination of graham crackers, gooey marshmallows, and rich chocolate into a charming and portable winter treat! Whether you're nestled by the fireplace or gifting these treats to loved ones, these S'mores Cakesicles promise a sweet and indulgent celebration that captures the spirit of the season.

Ingredients:

  • 8 ounces Merckens Cocoa Dark Candy Melts (or any other color/flavor)
  • 1oz Marshmallow Fluff
  • 2 standard size graham crackers
  • 1oz mini marshmallows or other sprinkles (for decorating)

Tools:

  • A cakesicle mold (we used the Diamond Pattern)
  • A paintbrush
  • A spoon
  • A knife
  • A fork
  • A silicone spatula
  • A cutting board

Instructions:

Step 1: Melt most of the Candy Melts in a microwave-safe bowl in 30-second increments at half power stirring after each interval. Once the chocolate is about 90% melted keep stirring until the chocolate is completely melted.  Alternatively, you can melt the chocolate using a double boiler.  (Make sure to save some of your unmelted Cocoa Dark Candy Melts for decorating your cakesicles in the final step.   

Step 2: Spoon some of the melted Cocoa Dark into each cakesicle mold, and then use the paintbrush to evenly paint the melts up the sides and over the base of each mold cavity.

Step 3: Cut the graham crackers in half, and then half again (length-wise). Take two of the pieces, and smear marshmallow fluff on one side, then sandwich together. Place this gently into one of the painted cavities. Repeat with the other cavities.

Step 4: Spoon the rest of the melted Cocoa Dark candy melts over the graham cracker sandwiches and down the sides. Once filled, gently tap the cakesicle mold to get all of the air bubbles out.

Step 5: Place the mold in the fridge on a flat surface to let set for 15 minutes.

Step 6: Once set, take the smores out of the mold (leaving them in the mold for too long can cause the chocolate to turn white, and can take away the shine).

Step 7: Melt the remaining Candy Melts in a microwave-safe bowl in 30-second increments at half power stirring after each interval.  Once the chocolate is about  90% melted keep stirring until all of the chocolate is completely melted.

Step 8: Drizzle the melted chocolate with a fork over the molded cakesicles, and then add mini marshmallows, sprinkles or other decorations. Let the chocolate dry and then enjoy!
