For baking, 1 teaspoon baking extract = 1 teaspoon emulsion. Use about half to 2/3, if you are using the Lemon Emulsion in recipes that don't require baking or heating, such as frosting or cream centers. Use 1/2 teaspoon of Lemon Emulsion to replace 1 teaspoon of lemon zest in your recipes.
